Pasta like Grandma used to make

It all started in Viareggio in 1992, when Giuseppe Palmerini and his wife Felicina opened a small artisan shop, as they wished to bring the goodness of traditional Tuscan fresh pasta on everyone’s tables.

We have always stood out for the high quality of our products that has made us expand so quickly, so today our pasta can be found in the dishes of famous restaurants and on the shelves of leading supermarkets.

In 2009, we relocated the Pastificio to Capezzano Pianore and, as the shop expanded, Giuseppe Palmerini handed the baton over to his son Emanuele, who carries on his parents’ business with great passion and dedication, day after day.

Emanuele and his highly skilled staff have launched new types of fresh pasta to meet the needs of an increasingly demanding clientele who is keen on the quality and provenance of the ingredients.

Our flagship product is beef tortelli, its recipe a jealously–guarded secret, which we can match with our beef ragu: a real delicacy. And there’re lots more delicious dishes, such as ricotta and spinach ravioli, fish ravioli, beef tortellini, beef and ham ravioli. We also make many different kinds of non-stuffed egg pasta: maccheroni, tagliatelle, tagliolini, pappardelle, as well as a number of bronze-die egg pasta, such as paccheri, penne, trenette.

Our most popular products include our special pasta bakes. From the more classic beef lasagne to the more exclusive fish lasagne, as well as crepes filled with ricotta and spinach, mushrooms or fish, through to cannelloni filled with beef or ricotta and spinach, or even potato gnocchi and chicche, which take just one minute to cook.
